We All Scream For Ice Cream

I scream you scream we all scream for ice cream for this True North Tale I sat down with Chef Robin Wasicuna who has hopes of bringing an ice cream trike to the north. But first, he tells me how his three-decade-long culinary journey got started.

I actually started cooking a meal once a week for my family when I was in grade six. So I started pretty young. I just always had a passion but kind of fell into the industry by accident, because when I was graduating high school, I wanted to take a year off, but my parents insisted that I go to school, and I didn’t know what to do or what to take, then a chance meeting with my guidance counselor. And he brought up What about culinary school, and I just said, Sure I like cooking. And that’s kind of where it all started 30 some years ago,

Making his own ice cream has always been one of Robin’s favorite things to do. Here’s Robin letting us know some of his favorite things about the process.

I’ve been making my own ice cream at home and at the restaurant for a number of years now. Ice cream is just one of my favorite things. I really like learning how to make it different ways to make it different techniques, different ingredients tell a story with the flavors of the ice cream, you know, there’s a lot of things about it. And I’m like the biggest thing is that it’s a lot of fun.

Robin tells us where the idea of bringing an ice cream trike to Yellowknife came from

Ever since I was a child I loved seeing those ice cream bikes and they fascinated me and I just always wanted to do that as a job. And you know, you put things aside as life moves on and I saw an opportunity last summer to get it started. But then of course COVID came along and kind of shut everything down and I wasn’t sure about it. So I put it off and this just seems like a good chance and a good opportunity to start things off again and get it going.

Currently, Robin has a GoFundMe up where you can help him bring an ice cream trike to the north. He also says to watch his Facebook page for any upcoming fundraiser as Robin let us know what sort of frozen treats he wants to have in his ice cream trike.

I’m gonna offer as you know, the standard fare of popsicles and you know, all those cartoon shaped frozen treats and stuff, but I’m going to offer homemade ice cream sandwiches that are going to be like my focus different flavors of ice cream, different cookies, the edges of the sandwiches will all be rolled in something for a little bit of texture and flavor.- Chef Robin Wasicuna
